Thomas is a third generation chef in the renowned Troisgros family, a revolutionary name in contemporary gastronomy. Brothers Pierre and Jean Troisgros’ three Michelin-starred restaurant "La Maison Troisgros" in Roanne, France received its first star in 1955, second in 1965 and third in 1968. Pierre is Thomas’ grandfather. When Thomas was just ten years old, he spent a season at La Maison Troisgros. During his culinary training and stages spent in renowned restaurants, he learned the importance of scents and texture of fresh ingredients, which he incorporates into his dishes today as executive chef in his family’s restaurant, Olympe, in Brazil where he works alongside his father, Claude.
