Executive Sous-Chef, KEITH THEODORE
was named Executive Sous-Chef at The Little Nell in the spring of 2016, promoted from his previous role as Executive Banquet Chef. Originally from Denver, Keith’s introduction to the culinary arts came from studying at the AVP Culinary Training Program at Pikes Peak College in Colorado Springs. His culinary career began at The Broadmoor in Colorado Springs, the only other Five-Star, Five-Diamond property in Colorado alongside The Little Nell. He then went on to senior roles as Chef de Cuisine at Omni La Mansion Del Rio in San Antonio, Tex., Executive Sous-Chef at The St. Regis Aspen and Executive Chef at Syzygy Restaurant in Aspen.
Throughout the course of his career, Keith has participated in and earned accolades from a wide range of competitions from chef galas to fundraisers, as well as winning the esteemed Apprentice of the Year while at The Broadmoor. When he’s not in the kitchen at The Nell, he loves to snowboard, hike, and not surprisingly, cook and grill for friends.
