Jernan Herman, Sous Chef
Originally hailing from Lake Tahoe, Jernan Herman, better known as Nan, arrived to The Little Nell with a fresh diploma in hand from the University of Missouri. His professional culinary career began as an intern in Ajax Tavern in 2015. Over the next three years, Nan’s energy and passion for creating delicious food allowed him to rise through the ranks from intern to prep cook, line cook, supervisor and now sous-chef of the mountainside, French bistro. In keeping with The Nell’s desire to feature local, seasonal ingredients as much as possible, Nan works to cultivate relationships with local farmers and artisans and create dishes to highlight the best of the flavors found here in the Rockies. One example of this is changing the Ajax Double Cheeseburger to feature the hotel’s signature, local Wagyu beef. While outside of work Nan takes advantage of all the activities the Roaring Fork Valley has to offer, he feels true joy when cooking for others and seeing their faces as they enjoy his dishes.
