THE LITTLE NELL ANNOUNCES NEW MASTER SOMMELIER CARLTON MCCOY

McCoy joins group of elite wine professionals

Aspen, Colorado (May 22, 2013) – Aspen’s finest hotel is proud to announce the addition of a new Master Sommelier to its team. Carlton McCoy, assistant wine director for the hotel, has just received his Master Sommelier Diploma, joining an elite group of 133 top wine professionals in North America.

The Little Nell has had more masters come through its wine program than any other establishment in the country, now with 11 masters working or having worked on property. In the past five years, The Little Nell has generated 5 new Master Sommeliers. The hotel was proud to host the Master Sommelier Exam in Aspen May 19-22, 2013. The exam, dubbed “the hardest test in the world,” has a pass rate of approximately 10 percent and was being held for the second time in Colorado.

As a Master Sommelier, McCoy has now achieved the highest distinction afforded in the wine industry by successfully completing an intense examination that requires extreme focus and determination. The overall examination consists of a verbal theory test where other masters ask 150 questions on anything and everything relating to wine, spirits and sake, while a service test expects candidates to correctly address mock service scenarios including wine decanting, Champagne service and pairing different wines with food. Finally the candidate must also blind taste six wines in less than 25 minutes, successfully determining the wine’s origin, grape and vintage.

63 candidates sat for the exam at The Little Nell this week, with just 4 passing.

The Little Nell’s Wine Director Jonathan Pullis received his Master Sommelier diploma in 2009, and Food and Beverage Director Sabato Sagaria received his in 2012.

The test is the subject of an upcoming documentary, SOMM, which will be released on iTunes and in select cities June 21. Sagaria, as well as former Little Nell sommeliers Dustin Wilson and Brian McClintic, are stars of the documentary.
About Carlton

Carlton McCoy began his career in food and beverage in high school, in a culinary arts course. A scholarship to The Culinary Institute of America called McCoy to his true passion: wine and service.

Carlton has a sense of adventure, travelling the world in search of great wine and spirits. He has graced several celebrated environments including Thomas Keller’s Per Se, Marcus Samuellson’s Aquavit, Tom Colicchio’s Craft Steak in New York, and Eric Zeibold’s CityZen at The Mandarin Oriental in Washington, DC.

Carlton arrived at The Little Nell in November 2011, inspired by the hotel's Wine Spectator Grand Award-winning program and the property's exciting reputation. The Little Nell has employed eight of North America's 118 master sommeliers, and Carlton hopes to become the ninth. When he's not serving, studying or tasting wine, you can find Carlton fishing, camping, hiking or skiing.

About Helen DeFrance
Helen was born and raised in Jackson, MS. The fourth child in a family of six children, she learned the basics of cooking as a child from her grandmother.

Helen is a graduate of Mississippi State University and a Master’s Degree of Education at Pepperdine University. Helen credits her dynamic, hands-on approach to cooking with kids in part to her education background, where her emphasis was on Montessori training, a method of teaching based on hands-on, experiential learning. Helen understands the importance of engaging children in the learning process and brings this concept into the kitchen. Her cooking classes not only involve children in every aspect of planning the family meal, but also teach them the source of the ingredients and the steps it takes to make a successful meal.

She combined her two loves, teaching and cooking, and developed a curriculum for kids called “Thyme to Cook!” She has been teaching children’s cooking classes for ten years and discovering and encouraging mini chefs in the making, including creating and running the “Kitchen Full of Kids” program at the acclaimed Blackberry Farm in Tennessee. She is the author of two cookbooks At Home Café: Gatherings for Family and Friends and At Home Café: Great Food and Fun for Everyone. Her unique approach to cooking with children has been featured on the “Martha” show, on which she cooked with host Martha Stewart, and has been featured in Southern Living, Mississippi Magazine, and Delta Magazine.

Helen resides in Aspen, CO.

THE LITTLE NELL ANNOUNCES DEPARTURE OF MANAGING DIRECTOR JOHN SPEERS

Aspen, Colorado (March 8, 2013) – The Little Nell and parent company Aspen Skiing Company today announced the departure of Managing Director John Speers, who will be joining the Faena Group’s Hospitality Branch as general manager. Speers has been at the helm of The Little Nell for the past six years, building upon the Forbes Five Star and AAA Five Diamond property’s position as the definitive hub of Aspen’s hospitality scene.

During Speers’ tenure, The Little Nell underwent a major renovation with an extensive guest room makeover in 2009, an update to the property’s Living room in 2011 and the opening of the hotel’s remodeled restaurant element 47 in December of 2012. Speers also brought the hotel’s Adventure Program to fruition, adding unique offerings such as fly fishing trips in a hand-crafted wooden boat as well as a comprehensive cycling program, among other activities. Additionally, operations and rentals of The Residences at The Little Nell were added under Speers’ purview.

Mike Kaplan. “He managed to not only expand our offerings to our guests but also increase employee satisfaction levels while building an incredible team.”

In addition to hotel operations and capital improvements, Speers worked to make sure the hotel was instrumental in the Aspen community. In the last fiscal year alone, the property has supported more than 60 local charities including the Buddy Program, Jazz Aspen/Snowmass, the Community Foundation, Aspen Center for Environmental Studies, Aspen Valley Land Trust and the Children’s Health Foundation.

Speers also worked to foster a sense of community as a gathering place and to promote the town of Aspen as a world-class destination. He partnered with Jazz Aspen/Snowmass to create the JAS Café Downstairs at The Nell, an intimate jazz club that brings award-winning musicians to Aspen during the winter months with affordable performances open to locals and guests. Speers also introduced the Big Aspen BBQ Block Party, a non-profit event that brought pit-masters from around the country to Aspen for a community celebration of food and music.

“As we look to our future without John, we remain more committed than ever to the highest quality, most personalized service and experiences for our Nell guests and to providing the most rewarding workplace in the industry,” Kaplan said. “John will remain in his role until April 5, and we are posting the position to begin the hiring process.”

Aspen, Colorado (December 12, 2012) – The Little Nell recently opened the doors to its new restaurant, Element 47, where diners are treated to more than beautiful dishes featuring Colorado cuisine. They are greeted by original artwork carefully selected by Paula Crown, who owns The Little Nell with her family and is a major contributor to the art world.

An artist herself, Crown also serves on the board of New York’s Museum of Modern Art, the National Council of the Aspen Music Festival and the President’s Committee on the Arts and the Humanities. She graduated from the School of the Art Institute of Chicago with a master’s degree in painting and drawing earlier this year. Tangentially, all of the artists selected for Element 47 have ties to the institute.

“There’s something incredibly special happening at the school right now, and we wanted to assemble a collaboration using these remarkable, related talents,” Crown said. “Almost all of the work was commissioned for Element 47. The size of each piece became the practical consideration, and we allowed the artists to use their problem-solving skills for the designated walls.”

The restaurant features works by Michelle Grabner, Angel Otero, Scott Reeder, Philip Vanderhyden, Cameron Martin and José Lerma. The space also features one of Paula Crown’s own works, titled “Cockpit Side (2012).”

Crown and her team, consisting of art consultant Christopher Byrne and architecture firm Bentel & Bentel (2012 James Beard Restaurant Design award-winner), aimed to create a hotel restaurant that was a departure from the expected.

“We knew Element 47 needed its own point of view, so in addition to changes to the menu that allow people to enjoy a lighter meal, we wanted to incorporate great art into the space,” said Little Nell Managing Director John Speers. “Now, it’s a place that heightens all of the senses with beautifully presented food, impeccable service and a visual feast.”

The hotel’s former restaurant, Montagna, was closed in September, making way for the new Element 47 which opened December 5. The name is a nod to silver on the periodic table and Aspen’s mining history. Crown and her design team orchestrated the installation of silvery fabrics and accents, as well as artwork itself that played to the concept. At times, the elements came together organically.

“Of special note was Michelle Grabner's series of silverpoint Tondo paintings,” Crown said. “During our conversations, we discovered that the medium she used for her canvases could only be purchased from one source—a mine in Colorado. It’s interconnected and overlapping concepts like this that make Element 47 so interesting.”

Each piece in the space is quite different visually and texturally. Philip Vanderhyden’s work uses graphite dust glazed onto burlap and linen, while José Lerma’s work is paint on carpet. Cameron Martin’s “Trees” features images of aspen trees and is acrylic on canvas.

Other design elements include a fortified connection between the vibrant bar scene to the dining room, a glass wine wall incorporating the restaurant’s Wine Spectator Grand Award-winning cellar and lighting to provide a distinct look for each meal period. The space also includes natural elements such as stone, sumptuous wood, blackened steel and rich leather seating.

Aspen, Colorado (November, 2012) – The Little Nell is set to debut its new restaurant, Element 47, for dinner on December 1, unveiling a completely redesigned and refreshed space which formerly housed Montagna Restaurant. Element 47 references silver on the periodic table, a precious metal firmly tied to Aspen’s silver mining past.

New to Element 47 and a departure from the previous prix fixe menu format, guests will choose dishes à la carte. Colorado agriculture is the focal point of Chef Robert McCormick’s menu, drawing from local produce and livestock as well as sustainable seafood from both East and West coasts. The menu will introduce new favorites like Wagyu Tartare with gruyere, purple mustard, pastrami spice and quail egg; Sorrel Cured Atlantic Fluke with blood orange, petite lettuce and green olive; Wild and Cultivated Mushrooms with roasted, flan, tortellini and herbs; and Local Anjou Pear Agnolotti with wagyu bresaola, celeriac and pickled chanterelles. There is also a six course market menu with optional wine pairing available.

Along with the opening, the restaurant will debut its new Colorado Well which will highlight a selection of top quality Colorado-made spirits and beers. The restaurant will also unveil its new private label champagne, Marc Hébrart “Sélection” Brut, N.V., which will be one of the stars of the restaurant’s 20,000 bottle cellar.

Sabato Sagaria, food and beverage director at The Little Nell, has been furiously preparing for the restaurant opening, training staff and making sure the dining experience is approachable and inviting.

“We’ve been serving contemporary food with a local flair for years. It’s time our décor matched that concept,” he said. “Our staff can’t wait to give our guests the warm and genuine service they expect, in a new and updated ambience.”

The Little Nell hired 2012 James Beard Restaurant Design award-winner Bentel & Bentel to spearhead the renovation. Design elements include a fortified connection between the vibrant bar scene to the dining room, a focus on large-scale artwork, a glass wine wall incorporating the restaurant’s Wine Spectator Grand Award-winning cellar and lighting to provide a distinct look for each meal period. The space also includes natural elements such as stone, sumptuous wood, blackened steel and rich leather seating softened by luxurious fabrics and wall coverings.

While the space will open to limited guests on Dec. 1 for dinner, full breakfast, lunch and dinner service will not be available until Dec. 5. Please call 970-920-6330 for reservations.

Nell to Host Premier Burgundy Wine Event

THE LITTLE NELL TO HOST PREMIER BURGUNDY WINE EVENT

“While eating dishes like buttermilk pancakes and hearty breakfast burritos, guests can also chat with Aspen Mountain insiders, share ski tips or even learn the location of those secret powder stashes,” said Tracy Duhe, Sundeck general manager. “Then those guests get to be the first ones to hit the slopes.”

First Tracks Breakfast is limited to 80 guests. Tickets are $25 (including the breakfast) and can be purchased at the gondola ticket office. Tickets should be purchased by 4:30 p.m. the day before. Guests must also have a valid lift ticket.

THE LITTLE NELL ANNOUNCES NEW MASTER SOMMELIER SABATO SAGARIA
Sagaria joins group of elite wine professionals

Aspen, Colorado (May 23, 2012) – Aspen’s finest hotel is proud to announce the addition of a new Master Sommelier to its team. Sabato Sagaria, the director of food and beverage for the hotel, has just received his Master Sommelier Diploma, joining an elite group of 122 top wine professionals in North America.

The Little Nell has had more masters come through its wine program than any other establishment in the country, now with nine masters working or having worked on property. The hotel was proud to host the Master Sommelier Exam in Aspen May 20-23, 2012. The exam, dubbed “the hardest test in the world,” has a pass rate of approximately 10 percent and was being held for the first time in Colorado.

“I wouldn’t say I had a home field advantage taking the exam here. With the kind and amazing team we have at The Little Nell, I’ve been enjoying their support throughout this entire process, every step of the way,” said Sagaria.

As a Master Sommelier, Sagaria has now achieved the highest distinction afforded in the wine industry by successfully completing an intense examination that requires extreme focus and determination.

Fifty candidates sat for the exam at The Little Nell this week, with just four passing. Among the candidates was Little Nell Assistant Wine Director Carlton McCoy, who passed both the tasting and the verbal theory portions of the exam on his first try.

The Little Nell’s Wine Director Jonathan Pullis received his Master Sommelier diploma in 2009.

The Little Nell is a year-round destination hotel at the foot of Aspen Mountain. For more information and reservations, please call 970-920-4600 or 888-843-6355.
The Court of Master Sommeliers was established in 1977 to encourage improved standards of beverage knowledge and service in hotels and restaurants. There are four examination stages to attain the top qualifications of Master Sommelier.
“Matt joined the The Little Nell culinary team in December, and over the course of the winter season, his skills and experience have helped streamline the catering culinary operations as well as support the busy Montagna kitchen team,” said Little Nell Executive Chef Robert McCormick. “I’ve had the pleasure of working in several kitchens with Matt over the years, and I’m thrilled to have him at the helm of Ajax Tavern.”

Matt replaces Allison Jenkins, who is returning to her home state of Texas to work as executive chef at a new restaurant venture in Austin.

THE LITTLE NELL TO HOST MASTER SOMMELIER EXAM
May 20-23 Exam First Ever Held in Colorado

Aspen, Colorado (April 17, 2012) – The Court of Master Sommeliers is holding its Master Sommelier Exam at The Little Nell in Aspen this May. The exam, dubbed “the hardest test in the world,” has a pass rate of approximately 10 percent and is being held for the first time in Colorado.

“There are only 118 master sommeliers in North America, and eight of them have worked or do work at The Little Nell,” said Jay Fletcher, chairman emeritus of the Court of Master Sommeliers. “The Little Nell has had more masters come through its wine program than any other establishment in the country. It’s the perfect place to hold this exam and see who the next masters will be.”

Fletcher said in addition to the Aspen location, The Little Nell was chosen for the exam because of its success in administering the Advanced Sommelier Exam in the past, its high service standards and professionalism.

Little Nell Food and Beverage Director Sabato Sagaria and Assistant Wine Director Carlton McCoy will both sit for the exam in Aspen with 50 candidates from around North America, all of whom have been invited to participate.

The test consists of three parts: service, tasting and theory. Service questions could include pairing food and wine, proper decanting and more. Tasting involves six wines with 25 minutes to identify grape varieties, country of origin, district and appellation of origin and vintages of the wines tasted. Finally, theory poses 150 verbal questions on everything from wine laws around the world to beer making techniques.

“I’m excited to welcome 25 fellow master sommeliers to The Little Nell as they help administer the exam,” said current Little Nell Wine Director and Master Sommelier Jonathan Pullis. “During the exam, there will be more master sommeliers in Aspen than there have ever been at one time.”

The Little Nell is a year-round destination hotel at the foot of Aspen Mountain. For more information and reservations, please call 970-920-4600 or 888-843-6355.
